Most vitamins, minerals and fibres are thus stabilised. It is proven! Indeed, the collective scientific expertise of INRA* (2007) showed that canned or frozen vegetables contained higher amounts of nutrients than fresh vegetables (which went through over a week-long supply chain and breaks in the cold chain).
With a longer supply chain – due to multiple transports between farmers, distributors, salesmen and consumers – vitamins and mineral salts of fresh products diminish with time. Thanks to a harvest when ripe and the deadline optimisation between harvesting and canning, the vegetables’ nutritional quality is preserved into the can.
