Soak them 2 minutes in cold water with a bit of white vinegar. Drain, start again if needed. Thoroughly spin or dry with a clean cloth.
Leeks and fennels
Split them in half to set the leaves aside and thoroughly rinse them in order to remove all the dirt. You can also rinse them one more time in a sieve once chopped.
Carrot, beetroot or salsify are often grown in sand which is also a great way to naturally preserve them. Your ally? The vegetable brush, to use before peeling them.
What about mushrooms?
They do not like water: once the earthy foot removed, a small soft brush or a barely humid cloth would suffice.
